Turkish meze cuisine · Tübingen, Österberg

Many small plates.
One long evening.

46 meze · half of them vegetarian or vegan · Mon–Sat from 16:30

Chapter 01

What meze is

MezeTurkish for the small plates that fill the table

Meze is not a starter and not a course. Meze is the Turkish way of eating: many small plates in the middle, everyone reaches in, and the evening has no fixed end.

In Turkey they say meze is there for talking. You sit long, order little by little, and the table gets fuller instead of emptier. Our meze lives on yoghurt, olive oil, herbs, roasted vegetables and everything Anatolia cooks down and dries in summer – plenty of spice, little deep-frying, finer than Arabic cuisine. Not a kebab plate, but a kitchen you share.

    Cold first

Two or three cold meze to begin – yoghurt, hummus, ezme. Bread comes with them.

  2. 02

    Warm follows

Then the warm ones: börek, sarma, mantı, braised lamb. One after another, in the order the kitchen finishes them.

    Share everything

Not everyone their own yoghurt – one yoghurt for all. Rule of thumb: 3–4 meze per person. Our team helps you put it together.

    Chapter 02

    Where we come from

    Harvested in summer.
    Lived on in winter.

Our family comes from Central Anatolia, from a village where farming shapes life. There you learn early what a season means.

In summer everything is harvested and preserved for the winter ahead: bread baked, vegetables dried in the sun, tomato paste cooked down. Unripe grapes turn into vinegar in a bottle left in the sun. Grain is winnowed in the wind until kernel and chaff part – a whole day for a single task.

Something of that remains to this day. It is in every meze on our menu: in the dried aubergines for the dolma, in the yoghurt, in the pickled vegetables, in the calm with which a table is set.

    01

    Bread

Baked daily, first on the table. Included with your first meze order.

    02

    Drying

Aubergines, peppers, okra – on strings in the sun. Later stuffed with rice: our dolma.

    03

    Cooking down

Tomato paste, pepper paste, grape pekmez. The base for ezme, sarma and sauces.

    04

    Waiting

Vinegar in the sun, yoghurt overnight, yufka by hand. Good food has its own pace.

These old skills must not disappear.Sultan, owner

Between the two lies everything that ends up on the table: the village pantry and the kitchen at the Österberg.

What the grandparents could do in the village – drying, cooking down, dough by hand – is on the menu today as meze. It is cooked in Tübingen, with a chef from Istanbul who comes from Anatolia himself. And with a good part of Germany in the kitchen: that's why it tastes like home here, in both directions.

    The room

    Deep blue, soft and warm.

A deep-blue wall, a soft bench, palms – and a wallpaper that feels like an Anatolian carpet. In the evening the light gets warmer, and the table fuller.
